Mince and Dumpling Bake

Ingredients

  • MINCE INGREDIENTS
  • 15ml canola or olive oil
  • One large onion, chopped
  • 800g lean beef mince
  • 50ml wholewheat flour
  • 30ml water
  • DUMPLING INGREDIENTS
  • 500ml spinach, destalked, chopped, and cooked in the microwave for eight minutes
  • 250ml wholewheat self-raising flour
  • Pinch of salt and pepper, or mixed spice to taste
  • 30ml canola oil or olive oil
  • One egg, well beaten
  • 150ml cream

Instructions

  • MINCE PREPARATION:
  • Preheat oven to 180°C
  • Fry the onion in the heated oil until translucent
  • Add meat and stir-fry until brown
  • Add remaining ingredients and cook for 10 minutes very slowly, stirring occasionally
  • Place mince in a greased baking dish with lid
  • DUMPLING PREPARATION:
  • Mix dry ingredients first
  • Add remaining ingredients and mix until it’s a soft but crumbly dumpling dough
  • Put teaspoon-sized lumps of dumpling dough onto the mince in dish and cover with lid when finished
  • Bake at 180°C for 30 minutes
  • Note: Mince can be prepared without dumplings for a lighter meal.
